EASY! ONE-POT Chicken Fajitas Dinner made with tender, juicy chicken breasts, fresh sweet pepper, and onions marinated in a homemade seasoning! Makes it perfect for meal prep and an easy weeknight dinner!
I love chicken fajitas for dinner! There is something about how cumin, garlic, and smoked paprika come together and make everything just taste better. For this recipe, we are going to take all of those wonderful flavours found in traditional Mexican cuisine and pack them into one pot. This makes for a dish that is tangy, sweet, and savoury and is great to share with your partner.
Seasoning the Chicken
First, we are going to start with seasoning the chicken. You can use your favourite Mexican style seasoning for the chicken or what I prefer is making my own because I find it tastes better and I know exactly what is going into it.
- Cut veggies, chicken breasts, and prepare the seasoning.
- Toss the chicken, veggies, and seasoning together.
Easy One Pot Chicken Fajita Dinner!
Now for the “hard” part: combining everything into one pot.
We first start with sauteing the vegetables and chicken in a large pot so that they can release their flavours.
When the vegetables are almost done we throw in the sushi rice, broth and tomato sauce. For this recipe I am using a 1:2 liquid to rice ratio and it’s important to take note of this ratio because it will determine how soft the rice will be when it absorbs all the liquid. The reason why I chose sushi rice is because of its texture. Sushi rice is chewy, sweet, and has a nice bite to it.
We are going to let it simmer for 35 minutes and viola – dinner is ready!
Substitution: Sushi Rice with White Long Grain Rice
Regular white long grain rice works well too. The ratio for white long grain rice is 1 cup of rice to 2 cups of broth and 2 cups of tomato sauce. The simmer time will be 50 minutes for the long grain rice instead of 35 minutes.
The finishing touches
Because we cooked the rice in the sauces it inherits all of the delicious flavours from the chicken, peppers, onion, garlic and spices. The result is a dish with the following flavour profile:
- Smokey
- Tangy
- Savoury
- Slightly spicy
The Chicken Fajita Dinner goes great as is, however, you can also add some garnishes like cilantro, cheese and even sour cream. I personally like to squeeze half a lime over the finished dish to give it a bit of zest.
Final Thoughts:
- Garnish (optional): I would recommend cilantro for garnish, as it adds a refreshing taste to it.

Easy One-Pot Chicken Fajita Dinner
Ingredients
- 500 gram (500 gram) Chicken Breast
- 1 (1 ) Yellow Bell Pepper
- 1 (1 ) Green Bell Pepper
- 1 clove (1 clove ) Garlic
- 1/2 (0.5 ) Red Onion
- 2 tbsp (2 tbsp ) Olive Oil
- 1 1/2 tsp (1.5 tsp) Cumin
- 1 1/2 tsp (1.5 tsp ) Chilli Powder
- 1 1/2 tsp (1.5 tsp) Smoked Paprika
- 1/2 tsp (0.5 tsp) Himalayan Salt
- 1/2 (0.5 ) Lime
- 1 cup (1 cup ) Broth
- 1 cup (1 cup ) Tomato Sauce
- 1 cup (1 cup ) Sushi Rice
Instructions
Prepare the chicken and vegetables
- Cut the yellow, green bell peppers, and red onion into slices and dice the garlic.
- Cut the chicken breasts into strips and set aside.
- Mix the chicken breast, yellow and green bell pepper, red onion, garlic, cumin, chilli powder, smoked paprika, salt, the juice of 1/2 of a lime, and 1 tbsp of olive oil in a large mixing bowl until everything is well incorporated.
Cook the chicken and vegetables
- Preheat 2 tbsp of oil to high heat in a large frying pan/pot.
- Stir fry the chicken along with the vegetables for about 4 minutes or until chicken breasts are mostly cooked on the outside.
- Add in the sushi rice, broth, and tomato sauce. Stir until everything is well incorporated and bring it to a boil and then cover the pan with a lid and simmer for 35 minutes.
- Stir the rice around every 10 minutes so nothing sticks to the bottom.
Add your favourite garnish
- Serve the chicken fajita dinner just as it is or with your favourite garnish (cilantro, and lime wedges).
Notes
